We present an easy version of a cocktail featured on a new drinks list. Designed as a batch pre-mixed that is packed with flavours associated with holiday season, rendering it perfect for your celebration. Reserve the remaining cordial you can use for brunch beverages, desserts, or to make additional servings of bikinis.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Citrus Syrup: Place all the items inside a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Then, turn off the heat allowing it to cool down entirely. Pour into an sealable bottle, cap it keeping it in the refrigerator, it will last for about four weeks.
For the Premix: Mix every spirits and syrup into a big jug, leave to sit for one hour, then filter it best through muslin, to ensure it's perfectly clear.
To serve: Pour 85ml from the premix into your mixing glass containing ice, gently stirring carefully for one minute to cool it down. Strain to a frosted cocktail glass or similar, decorate with a few cranberries and finish using a light spray of the essential oil over the drink.
